5,6,7,8...















Shaylee had her last dance recital. I think Shay was really excited! She has come along way in dance and I like watching her. I am so sad to be sending her to high school I wish she would not grow up so fast. I have tears in my eyes right now just thinking about it. Now we are onto high school drill team (she really wanted to be a cheerleader but they aren't taking freshmen this year (go figure). Shaylee should have drill team tryouts sometime this week. Good Luck to her. While I am posting about dance I thought I would put a picture of Jordan's dance group on here also. When the high school drill team was going to state they had an assembly and they asked some boys if they would dance it was so funny! Don't they look so cute. Jordan would be so embarrassed if he knew I put this on here. I love being a parent!

Baked NOT fried Chicken Taquitos


Chicken Taquitos w/ creamy cilantro lime dressing


1/3 C (3 oz) cream cheese

1/4 C green salsa

1T fresh lime juice

1/2 tsp. cumin

1 tsp chili powder

1/2 tsp onion powder

1/4 tsp minced garlic

3 T chopped cilantro

2 T sliced green onions

2 C cooked shredded chicken

1 C. grated pepperjack cheese

Small corn tortillas or floured ones

cooking spray


Heat oven to 425*. Line baking sheet with foil and spray with cooking spray.

Heat cream cheese in microwave for about 20 seconds so it's soft and easy to stir.Mix all ingredients together until combined.


If using corn tortillas which I did, they tend to break and crack so they don't look as pretty but they still taste good. ( I think next time I would use floured ones because I think they would be easier to work with although I think corn ones taste better as a taquito.) Work with a few tortillas at a time wrap in damp paper towels (I do this when I make tacos also because It makes the tortillas really soft and it doesn't break apart while eating it. Something I learned when I worked at taco maker lol). and microwave for 20 - 30 seconds I had to do the corn ones a little longer. Place 3 -4 T of chicken mixture on end of tortilla and roll up. Place on baking sheet seam side down. Spray tops with cooking spray and bake till crisp and ends are golden brown about 15-20 minutes. Serve warm they go hard after awhile. Makes about twelve.


Cilantro lime dressing

1 pack (1 oz) hidden valley ranch dressing

1C mayo

1/2 C milk

juice from one lime

2 cloves garlic minced

1/2 C chopped cilantro

1/4 C. green salsa

hot sauce just depending on how hot you want it


Put everything in a blender and blend refrigerate to thicken.


These were sooo GOOD. They were also pretty easy! Best of all you can eat alot because they are baked not fried!

Monterey Chicken


I love looking at food blogs and I came across this recipe for monterey chicken and it looked so good, so I decided to try it. It was really good and my family loved it. Best of all it was easy!


Monterey Chicken

2-4 chicken breasts

1/2-1 cup bbq sauce

shredded Cheddar cheese

tomatoes chopped

green onions chopped

Bacon (cooked) a couple slices for each chicken breast


Preheat oven to 350*. Season chicken on both sides with salt and pepper. Bake in oven for 30 min. Spread bbq sauce generously over each piece of chicken and return to oven for 10 min. Wrap cooked bacon around each piece of chicken, sprinkle with cheese as much or little as you want. Place under broiler for a couple of minutes to melt cheese. Sprinkle with tomatoes and green onions. ENJOY!
