Baked NOT fried Chicken Taquitos


Chicken Taquitos w/ creamy cilantro lime dressing


1/3 C (3 oz) cream cheese

1/4 C green salsa

1T fresh lime juice

1/2 tsp. cumin

1 tsp chili powder

1/2 tsp onion powder

1/4 tsp minced garlic

3 T chopped cilantro

2 T sliced green onions

2 C cooked shredded chicken

1 C. grated pepperjack cheese

Small corn tortillas or floured ones

cooking spray


Heat oven to 425*. Line baking sheet with foil and spray with cooking spray.

Heat cream cheese in microwave for about 20 seconds so it's soft and easy to stir.Mix all ingredients together until combined.


If using corn tortillas which I did, they tend to break and crack so they don't look as pretty but they still taste good. ( I think next time I would use floured ones because I think they would be easier to work with although I think corn ones taste better as a taquito.) Work with a few tortillas at a time wrap in damp paper towels (I do this when I make tacos also because It makes the tortillas really soft and it doesn't break apart while eating it. Something I learned when I worked at taco maker lol). and microwave for 20 - 30 seconds I had to do the corn ones a little longer. Place 3 -4 T of chicken mixture on end of tortilla and roll up. Place on baking sheet seam side down. Spray tops with cooking spray and bake till crisp and ends are golden brown about 15-20 minutes. Serve warm they go hard after awhile. Makes about twelve.


Cilantro lime dressing

1 pack (1 oz) hidden valley ranch dressing

1C mayo

1/2 C milk

juice from one lime

2 cloves garlic minced

1/2 C chopped cilantro

1/4 C. green salsa

hot sauce just depending on how hot you want it


Put everything in a blender and blend refrigerate to thicken.


These were sooo GOOD. They were also pretty easy! Best of all you can eat alot because they are baked not fried!
